Have you been reading any of the Paleo or gluten free blogs that abound on the net? I am subscribed to about 30 of them. There are many, many sites containing recipes and techniques for gluten free living. Just google.

I made shepards pie last night. Beef, browned with salt and pepper and onions and a bit of water to make a broth, then topped with frozen peas and some cauliflower, then topped with smashed spud (I have used both white potatoes and sweet potatoes/yams for that part and both taste great.) i sprinkled some cheese on OH's side and baked it till the cheese slightly browned and served it, it was great.

This is a nice recipe for a gluten-free 'flatbread'. It has a slightly heavy 'cakey' texture (probably because it contains eggs, I would think you could substitute flax eggs for them if you needed to).

I used 1 & 1/2 cups of a pre-blended gluten free flour mix (Asda do one here in the UK, Doves Farm is also good. I imagine there'd be equivalents in other countries). The only tricky thing is finding the right sort of tin to bake it in. I've used a roasting tin before - pour it in about an inch thick and cut it into squares when baked. I make double. I've made it a few times. It's quite easy.

ETA: you may need to cook it for slightly longer than stated.

I love Mark's Daily Apple for gluten free recipes. His site is all about primal (paleo with some dairy and chocolate added), therefore no grains - no gluten. Every Saturday he posts new recipes and there are a ton.

I also love Elana's Pantry and her Silver Dollar Pancakes, although I use sugar and butter not the substitutes she gives. Adding in bananas is super yummy too!

I just made some of the flourless peanut butter cookies!! I stirred in some chocolate chips and sprinkled on a tiny bit of sea-salt just before baking.

They are lovely - crumbly and chewy. Thanks for posting the recipe!
