Thanks truepeacenik! I will definitely try that. I make a chocolate fudge sauce with white beans too. Drain and rinse beans add a splash of non dairy milk, coco powder and agave nectar. Blend well.
I also know the torture of a mini food processor, that is all I have too.

Oh, I completely agree - no arguments there! But I have experienced enough "ew vegan food" knee-jerk reactions from people who are not vegan that I really appreciate when a non-vegan actually states they like the food. People who eat vegan food without knowing or thinking about it either way are a different matter to me. So yeah, I always enjoy hearing that.

I made a lovely stew last night. It is made from onion, pepper, carrot, some stock and tomato puree along with paprika, cumin, mixed herbs and cubes of smoked tofu with black beans. SO GOOD!

Ooo that sounds yummy joflakes!

I made pasta bake last night with wholemeal pasta with a courgette, tomato and garlic sauce with onions, red and green peppers, leek, spinach, mixed herbs, toasted pine nuts and mixed beans. (I put chorizo and pepperoni in DBFs instead of the beans) Because I'm still only gradually working towards veganism I put cheese on top and I'm wondering if anyone has any tips of what to sprinkle on top of things like that instead? Melted cheese is the tricky one, I'm happy without cheese in all other situations, I think its going to be the toughest thing.

I like the sound of that! Where can you get soy cheese from? Do normal supermarkets do stuff like that?

Soy cheese has gotten mainstream enough where it's found in most supermarkets nowadays, at least in the United States. Although not all soy cheese is vegan.

Last night I made my version of chana masala: chick peas, tomato paste, coconut milk, 3 bay leaves, sea salt, turmeric. Fresh parsley sprinkled on top as a garnish.

Served with Jasmine rice.

Fridgee - Holland and Barratt is your best bet. There is one from Tesco 'free from' range but I think it's a bit gross!

I was so tired and lazy to go to the grocery store to pick up food for dinner tonight. I was able to scramble up a decent dinner tonight from the pantry, and it was soo good! Brown rice pasta, black beans, and crushed tomatoes that I lightly seasoned. Salad (romaine lettuce, tomatoes, olives, hearts of palm) with a homemade creamy cashew miso dressing. Delish!
