I'm starting to try to transition to vegan and I've signed up the the site holo mentioned (thanks holo!) it should be really helpful!

One of my worries is sandwich fillings. I like Houmous with grated carrot and spinach and also crunchy peanut butter and marmite. What other fillings can you suggest?

I'm not vegan, but I have cooked many vegan recipes when I was on the Daniel fast. I was pleasantly surprised at how delicious and satisfying some vegan meals can be!

I love sandwiches! Here are some I have:

- Redwoods sage and onion slices with salad and vegan mayo (can get all in Holland and Barratt)

- Redwoods fake fish fingers (again from H&B)

- Peanut butter, dairy-free chocolate spread and banana

- Fake cheese and tomato, toasted

- Falafel in a toasted sandwich or pitta bread with humous and salad

- Any jam or marmalade is generally okay, with Vitalite margarine and peanut butter

- Cashew nut butter on toast (from H&B...amazingly tasty!)

Hmmm....*thinking of sandwiches*

I had a mad one last night...I toasted some bread, put peanut butter on it then sandwiched little squares of dark chocolate in it. It was so nice!

- Maple syrup and banana and peanut butter

- Agave syrup and peanut butter

- Scrambled tofu with sliced tomato

- Fake cream cheese on toast/sandwich with salad (got some from a large tesco the other day)

I hope that gives you some ideas!

Oh I also meant to post that there is a rather good forum I'm on.

It's veganforum.com.

Obviously it's not as good as here or LHC but it is interesting to read!

Thanks joflakes, good to see you
For the parsnip fries, it is basically peel and cut into strips.
Mix some nut butter or butters with olive oil and salt.
Bake until crispy and enjoy!
