My long-time staple meal is tacos. Its easy to just open a can of beans and have some tortillas and lettuce and salsa in the fridge. Its a complete meal and I don't get tired of having them a couple times a week. And if you feel the need ot mix it up you can add some sort of "meat" or rice or corn or guac or...the combinations are endless!
Also, I'm usually not one for microwaving stuff but recently I've discovered these deeeelicious single serving microwavable (I sometimes make them in the oven but it takes soooo much longer) pasta dishes. They're from Candle Cafe. I don't know if you have them in your area or if its something you'd be in to, but until this week I hadn't had ravioli in YEARS and I was really excited. The mac n cheese is great too, even my meat loving DBF likes it.
