Just wondering if anyone else out there is a vegan?
I am but I am failing in the cooking department recently. I find it so hard to cook for just the one of me! :calm:
Sorry, can't help you there, joflakes, I'm no vegan and my mind boggles at the thought of cooking vegan. Have you searched for recipes online?
I really only posted 'cos you looked lonely on this thread all by yourself, lol.
Sorry not vegan either but i do have alot of allergied to animal products so i do cook vegan much of the time. Have you check out vegweb.com? I have found fun recipes on pintrest to like avocado pesto.
My long-time staple meal is tacos. Its easy to just open a can of beans and have some tortillas and lettuce and salsa in the fridge. Its a complete meal and I don't get tired of having them a couple times a week. And if you feel the need ot mix it up you can add some sort of "meat" or rice or corn or guac or...the combinations are endless!
Also, I'm usually not one for microwaving stuff but recently I've discovered these deeeelicious single serving microwavable (I sometimes make them in the oven but it takes soooo much longer) pasta dishes. They're from Candle Cafe. I don't know if you have them in your area or if its something you'd be in to, but until this week I hadn't had ravioli in YEARS and I was really excited. The mac n cheese is great too, even my meat loving DBF likes it.

owlathena - ohh yeah i love lentil tacos grat meal. I grate potato into mine to help hold it togethe and it takes seasoning better than the lentils. Been craving vegan mac and cheese just to lazy to make it lol
Depends on what you like. I am not vegan but I cooked in a kitchen and we had to make special meals for the vegans (and gluten free).
Finding vegan bread seems to be a key thing, if you are the kind of vegan that will eat processed foods. We had vegan wraps available and we steamed vegies and put hummus in them. We also had vegan "butter" and sour cream and basically vegan immitations of non-vegan stuff so we just substituted it out.
Oreos are vegan ;)

Tonight I am cooking for 4, woohoo! :) My own recipe of spinach, meditteranean veggies, chickpeas and some garlic and paprika with a tomato-ish sauce in puff pastry. DROOL!
I'm also in a cake making mood. My weekend needs cake in it!

Et voila! - How about brownies?
2½ oz (75g) margarine
1½ oz (45g/5 tbsp) cocoa powder
2½ floz (75ml) soya milk
7 oz (200g) caster sugar
6 oz (160g) plain white flour
2½ tsp baking powder
¾ oz (20g/2½ tbsp) cocoa powder
4 oz (115g) caster sugar
6 floz (170 ml) soya milk
1½ floz (45ml) vegetable oil
1 dssp vanilla essence
1. Pre-heat oven to 180C, Gas Mark 4.
2. Combine first four ingredients in a saucepan and gently bring to the boil. Simmer for 1 minute, stirring well. Put saucepan into a bowl of cold water and beat sauce until it cools and thickens. Set aside.
3. Sieve flour, baking powder, cocoa and sugar into a bowl. Mix soya milk, vegetable oil and vanilla essence together. Stir flours, soya milk mixture and sauce together - do not overmix.
4. Place in a greased and lined tin roughly 10" x 8" and bake for 30 minutes.
Got to love chocolate brownies. I'm not vegan, but I do have a lot of time on my hands to go Googling :flower:
I'm not currently vegan(just vegetarian now) but was for a number of years and still cook vegan food quite a lot.
Are you subscribed to Meatout Mondays? It's mostly geared towards new veg*ns or people who are just considering it, but I've made a lot of wonderful recipes from there. It's a weekly mailing list.
